Bacon & Egg Breakfast Muffins

8-10 bacon slices

2/3 c chopped green onion

8 lg eggs

Avocado oil cooking spray

Directions

  1. preheat oven to 350 degrees
  2. spray muffin pan with cooking spray
  3. cook bacon until crisp, remove from heat and place bacon on paper towel to remove excess grease
  4. chop or break bacon into small pieces
  5. in a bowl, which eggs together, fold bacon and green onion into whisked eggs until well combined
  6. pour or ladle egg mix into muffin tin until 1/2 full
  7. bake muffins for 20-25 minutes, the edges should look browned and crispy
  8. remove from oven, allow to cool


Additional spices of your choice may be added to the muffins to enhance the flavor
