Bacon & Egg Breakfast Muffins
8-10 bacon slices
2/3 c chopped green onion
8 lg eggs
Avocado oil cooking spray
Directions
- preheat oven to 350 degrees
- spray muffin pan with cooking spray
- cook bacon until crisp, remove from heat and place bacon on paper towel to remove excess grease
- chop or break bacon into small pieces
- in a bowl, which eggs together, fold bacon and green onion into whisked eggs until well combined
- pour or ladle egg mix into muffin tin until 1/2 full
- bake muffins for 20-25 minutes, the edges should look browned and crispy
- remove from oven, allow to cool
Additional spices of your choice may be added to the muffins to enhance the flavor
