Smoked Turkey Rub
Instructions
- spatchcock the turkey
- place the rub under the skin on the breast, thighs, and drumstick
- rub the turkey with avocado or grapeseed oil
- place more rub on the oiled skin
- smoke the turkey for 30 minutes per # at 225-250 degrees
- check the temperature of the turkey after the appropriate amount of time, the turkey will be done when the temperature in the thickest part of the thigh is 165 degrees
- if the turkey is not complete at the expected time, bump the smoking temperature up 25 degrees and check it every 15-30 minutes to keep from over cooking
- when complete, remove the turkey from the smoker, place under foil wrap and let rest one hour before carving
