Smoked Turkey Rub

Instructions

  1. spatchcock the turkey
  2. place the rub under the skin on the breast, thighs, and drumstick
  3. rub the turkey with avocado or grapeseed oil
  4. place more rub on the oiled skin
  5. smoke the turkey for 30 minutes per # at 225-250 degrees
  6. check the temperature of the turkey after the appropriate amount of time, the turkey will be done when the temperature in the thickest part of the thigh is 165 degrees
  7. if the turkey is not complete at the expected time, bump the smoking temperature up 25 degrees and check it every 15-30 minutes to keep from over cooking
  8. when complete, remove the turkey from the smoker, place under foil wrap and let rest one hour before carving
