Apple Pie Cake


  • 4 packs of salted caramel pudding
  • 4 eggs
  • 4 T cold water
  • 1 t baking powder
  • 3/4 c of apples, finely diced
  • 1/8 - 1/4 t ginger and nutmeg
  • 1 t lemon juice


Directions


Preheat the oven to 350 degrees. In a bowl mix all four packs of pudding, eggs, water, baking powder, and stevia. Set batter aside for 30 minutes. In another bowl, mix apples with ginger and nutmeg; add the lemon juice and mix well again.


Pour pudding mix into parchment lined 8X8 baking dish. Bank for eight minutes. Edges should be crisp and center will be soft. Pour apples into baked cake shell and bake eight more minutes or until knife inserted in center comes out clean.
