Sweet & Spicy Cucumber Slices

1 1/2 # cucumber (slices as desired)

2 t kosher salt

1/2 c rice vinegar, seasoned or regular

1/2 c water

3 T Stevia

1/4 t red pepper flakes

2 T red onion, minced

Directions

Cucumber Preparation:

  1. place cucumber slices in a colander sitting over a bowl
  2. sprinkle with salt and toss
  3. let sit one hour refrigerated
  4. toss the cukes a few times to drain
  5. while cukes drain, prepare marinade


Marinade:

  1. combine vinegar, water, Stevia, and red pepper in a small saucepan
  2. bring to a boil
  3. reduce heat and cook until reduced to 1/3 cup (about ten minutes)
  4. remove reduction from the heat and add onions
  5. let cool to room temperature


When the cukes are done resting, pat them dry and then combine with the vinegar reduction.

Serve after refrigerated and well chilled.
