Baked Sole Hobo Packs
8 oz skinless sole fillet halved
4 green onions, sliced
1/2 radish, thinly sliced
1 T apple cider vinegar
1/2 t onion powder
1/2 t rosemary, chopped
Directions
- preheat oven to 400 degrees
- combine vinegar, onion powder, and rosemary stirring well
- cut two 6" squared of aluminum foil, place a fish filet in center of each square
- spread the green onions and radish evenly over the fillets, and then drizzle the vinegar mixture evenly over the vegetables
- fold foil over the fillets to make packets, and seal them tightly
- place fish packets on a baking sheet and cook 10 minutes
