Baked Sole Hobo Packs

8 oz skinless sole fillet halved

4 green onions, sliced

1/2 radish, thinly sliced

1 T apple cider vinegar

1/2 t onion powder

1/2 t rosemary, chopped


Directions

  1. preheat oven to 400 degrees
  2. combine vinegar, onion powder, and rosemary stirring well
  3. cut two 6" squared of aluminum foil, place a fish filet in center of each square
  4. spread the green onions and radish evenly over the fillets, and then drizzle the vinegar mixture evenly over the vegetables
  5. fold foil over the fillets to make packets, and seal them tightly
  6. place fish packets on a baking sheet and cook 10 minutes
