Basil Shrimp Pouches

1 regular size foil oven bag

1/2 c tomato, diced

1/4 c green onion, sliced

1/2 t grated lemon zest

1 T fresh squeezed lemon juice

1/4 t sea salt

1/4 t black pepper

8 oz large shrimp, peeled and deveined

1/4 c fresh basil, chopped


Directions

  1. preheat oven to 400 degrees
  2. place oven bag in a large shallow baking pan
  3. place the ingredients into a bowl and toss
  4. pour the contents of the bowl into the oven bag, fold edge to seal
  5. bake 10-15 minutes or until the shrimp is cooked through
  6. cut open the bag with a sharp knife and peel back foil


Dish into two even potions two bowls on a base of rice, noodles, or spinach leaves
