Blackened Fish

1/4 fresh squeezed lemon juice

2 T dried thyme

2 T dried basil

1/4 t black pepper

1/2 t dried crushed red pepper

1 t sea salt

Fresh parsley. chopped (for garnish)

8 oz fillet of halibut, flounder, or sole - skinned and halved

Lemon wedges


Directions

  1. put the first six ingredients in a medium saucepan over low heat and cook on low heat for ten minutes
  2. place fillet into shallow baking dish and pour mixture over it to coat it, then cover it and chill at least one hour
  3. heat a nonstick grill pan until a drop of water sizzles in the pan, then add the fillets and cook two minutes on each side or until fish flakes with a fork
  4. keep cooked fillets warm
  5. repeat procedure with remaining fillets
  6. garnish parsley and serve with lemon wedges
