Blackened Fish
1/4 fresh squeezed lemon juice
2 T dried thyme
2 T dried basil
1/4 t black pepper
1/2 t dried crushed red pepper
1 t sea salt
Fresh parsley. chopped (for garnish)
8 oz fillet of halibut, flounder, or sole - skinned and halved

Directions
- put the first six ingredients in a medium saucepan over low heat and cook on low heat for ten minutes
- place fillet into shallow baking dish and pour mixture over it to coat it, then cover it and chill at least one hour
- heat a nonstick grill pan until a drop of water sizzles in the pan, then add the fillets and cook two minutes on each side or until fish flakes with a fork
- keep cooked fillets warm
- repeat procedure with remaining fillets
- garnish parsley and serve with lemon wedges
