Veracruz Style Fish
1 T red pepper flakes
10 cherry tomatoes, halved
2 green onions, chopped
Sea salt and black pepper
4 oz fillet of halibut, flounder, or sole
3 T freshly squeezed lemon juice
1 clove garlic, minced
1 t paprika
Directions
- preheat oven to 400 degrees
- mix lemon juice, garlic, and paprika in small bowl
- place fish fillets in a shallow baking dish and coat with lemon mixture
- sprinkle the pepper flakes, tomatoes, and onions over the top of the fish
- season with salt and pepper and cover with foil
- bake approximately fifteen minutes, until the fish is white and flaky
