Smoked Halibut Salad

1 garlic clove

1 handful fresh basil leaves

1/4 t sea salt

1/8 t black pepper

1 t grated lemon zest

2 t fresh squeezed lemon juice

8 oz smoked halibut

1/2 red onion, peeled and cut into chunks

Mixed greens

1 tomato, quartered


Directions

  1. combine first eight ingredients in a food processor and pulse them until coarsely chopped
  2. place a handful of mixed greens on two plates and top each with 1/2 of the halibut mixture
  3. garnish with tomato wedges
