Ground Beef & Cabbage Soup

1 # ground beef

1 med onion, chopped

4 cloves garlic, minced

1 14.5 oz can diced tomatoes

1 15 oz can tomato sauce

4 c beef or vegetable broth

1 c cooked rice (white or brown)

1 T Worcestershire sauce

1 t paprika

2 T evo or avocado oil

Sea salt and black pepper to taste


Additional veggies and spices (optional)

3 lg carrots, sliced

4 med tomatoes, cubed

1 T Italian Seasoning

Directions

  1. sauté chopped onion, carrots, and garlic until vegetables begin to soften in oil in a large thick-bottom pot
  2. scoot vegetables to the side and add ground beef, brown the beef and then stir in the vegetables
  3. add the rest of the ingredients to the pot, stir well, cover and bring to a boil, reduce the heat to a simmer and cook, stirring occasionally until the cabbage has wilted, about 30 minutes
  4. taste the soup for flavor and add sea salt to taste


Ladle the soup into bowls and enjoy
