Ground Beef & Cabbage Soup
1 # ground beef
1 med onion, chopped
4 cloves garlic, minced
1 14.5 oz can diced tomatoes
1 15 oz can tomato sauce
4 c beef or vegetable broth
1 c cooked rice (white or brown)
1 T Worcestershire sauce
1 t paprika
2 T evo or avocado oil
Sea salt and black pepper to taste
Additional veggies and spices (optional)
3 lg carrots, sliced
4 med tomatoes, cubed
1 T Italian Seasoning
Directions
- sauté chopped onion, carrots, and garlic until vegetables begin to soften in oil in a large thick-bottom pot
- scoot vegetables to the side and add ground beef, brown the beef and then stir in the vegetables
- add the rest of the ingredients to the pot, stir well, cover and bring to a boil, reduce the heat to a simmer and cook, stirring occasionally until the cabbage has wilted, about 30 minutes
- taste the soup for flavor and add sea salt to taste
Ladle the soup into bowls and enjoy
