Italian Tomato Soup w/ Shrimp
1 pk Italian Tomato Soup mix
4-5 oz shrimp
1 oz mushroom, chopped
1 oz red onion, chopped
2 oz celery, chopped
1 tomato (small vine, cut into 1/8 chunks)
1/8 t cayenne pepper
Tabasco (to deglaze sauté skillet)
Directions
- sauté celery and red onion until slightly softened
- add mushroom and stir
- add cayenne pepper and stir in shrimp
- add tomato and place a lid on the skillet
- put soup mix in a microwave safe bowl and stir in 1 c of cold water
- remove the lid from the skillet and deglaze with Tabasco
- place the lid back on the skillet for another minute
- remove the lid and smash the tomato chunks
- heat soup mix per instructions on packet
- add the sauté into the heated soup mix
