Italian Tomato Soup w/ Shrimp

1 pk Italian Tomato Soup mix

4-5 oz shrimp

1 oz mushroom, chopped

1 oz red onion, chopped

2 oz celery, chopped

1 tomato (small vine, cut into 1/8 chunks)

1/8 t cayenne pepper

Tabasco (to deglaze sauté skillet)

Directions

  1. sauté celery and red onion until slightly softened
  2. add mushroom and stir
  3. add cayenne pepper and stir in shrimp
  4. add tomato and place a lid on the skillet
  5. put soup mix in a microwave safe bowl and stir in 1 c of cold water
  6. remove the lid from the skillet and deglaze with Tabasco
  7. place the lid back on the skillet for another minute
  8. remove the lid and smash the tomato chunks
  9. heat soup mix per instructions on packet
  10. add the sauté into the heated soup mix
