Asparagus Frittata
2 egg whites
1 whole egg
Asparagus
1 clove garlic, minced
1 T dehydrated onion, minced
1 T water
1 t parsley
1 t paprika
1 t cumin
Dash of sea salt
Tabasco (to taste)
Directions
- remove woody ends from asparagus
- break spears into 2-3 small pieces
- add to pan with garlic and cook until tender
- preheat oven to 400 degrees
- in a bowl, mix the eggs and water
- add asparagus, minced onion, and spices to the eggs and water
- stir mixture to blend together
- pour egg mixture into non-stick baking dish and bake for 10-15 minutes, until done
- top with Tabasco and serve immediately
