Asparagus Frittata

2 egg whites

1 whole egg

Asparagus

1 clove garlic, minced

1 T dehydrated onion, minced

1 T water

1 t parsley

1 t paprika

1 t cumin

Dash of sea salt

Tabasco (to taste)

Directions

  1. remove woody ends from asparagus
  2. break spears into 2-3 small pieces
  3. add to pan with garlic and cook until tender
  4. preheat oven to 400 degrees
  5. in a bowl, mix the eggs and water
  6. add asparagus, minced onion, and spices to the eggs and water
  7. stir mixture to blend together
  8. pour egg mixture into non-stick baking dish and bake for 10-15 minutes, until done
  9. top with Tabasco and serve immediately
