Cauliflower Rice

1 organic cauliflower

1 T organic coconut oil

1/2 c sweet onion, diced

1 t sea salt

1 t black pepper

Additional seasonings as desired (ex. seasoning mix)


Directions

Raw Version:

  1. simply add cauliflower into a food processor and pulse into tiny, fine cauliflower pieces
  2. this should be like rice
  3. stir in remaining ingredients
  4. store in air-tight container in refrigerator


Cooked Version:

  1. food processor like the raw version
  2. in sauté pan, coat w/ 2 T coconut oil and lightly cook the cauliflower with onion for about 5-7 minutes until softened to your desired texture
  3. stir in remaining ingredients while in the pan
  4. store in air-tight container in refrigerator
