Cauliflower Rice
1 organic cauliflower
1 T organic coconut oil
1/2 c sweet onion, diced
1 t sea salt
1 t black pepper
Additional seasonings as desired (ex. seasoning mix)
Directions
Raw Version:
- simply add cauliflower into a food processor and pulse into tiny, fine cauliflower pieces
- this should be like rice
- stir in remaining ingredients
- store in air-tight container in refrigerator
Cooked Version:
- food processor like the raw version
- in sauté pan, coat w/ 2 T coconut oil and lightly cook the cauliflower with onion for about 5-7 minutes until softened to your desired texture
- stir in remaining ingredients while in the pan
- store in air-tight container in refrigerator
