Herb Chicken Skillet


1.5 # chicken tenders

1 medium onion, chopped

1 can diced tomatoes (14.5 oz) drained

1/2 c low sodium chicken broth

1 t basil leaves

1/2 t black pepper

1/2 t oregano leaves

1/2 t sea salt

1/2 t garlic powder

1 package baby spinach leaves (6 oz)


Directions


  1. heat 1/4 low-sodium chicken broth in large skillet on medium heat
  2. add chicken, cook and stir 10 minutes or until browned
  3. add onion, cook and stir 5 minutes or until softened
  4. stir in tomatoes, remaining chicken broth and seasonings
  5. bring to a boil, stirring occasionally
  6. reduce heat to low, cover and simmer 3 minutes or until heated through
  7. stir in spinach, cook 2 minutes or until spinach begins to wilt
