1 lg chicken, spatchcocked

Yellow mustard

Avocado oil or grapeseed oil

Smoked Chicken Rub

Directions

  1. pat the chicken dry including under the skin
  2. rub the oil under the skin of the chicken then some of the smoke rub under the skin
  3. rub the oil on the outside of the chicken skin and put some more of the smoke rub on the skin
  4. place in the refrigerator for 2-4 hours
  5. preheat the smoker to 240 degrees
  6. place the chicken in the smoker and smoke it for one hour
  7. after one hour, raise the smoker temperature to 275 degrees
  8. check the chicken temperature after two more hours, the chicken is done when the breast temperature is 165 degrees, and the thigh temperature is 180 degrees
  9. check the meat temperature every 15 minutes so it doesn't overcook
