1 lg chicken, spatchcocked
Yellow mustard
Avocado oil or grapeseed oil
Smoked Chicken Rub
Directions
- pat the chicken dry including under the skin
- rub the oil under the skin of the chicken then some of the smoke rub under the skin
- rub the oil on the outside of the chicken skin and put some more of the smoke rub on the skin
- place in the refrigerator for 2-4 hours
- preheat the smoker to 240 degrees
- place the chicken in the smoker and smoke it for one hour
- after one hour, raise the smoker temperature to 275 degrees
- check the chicken temperature after two more hours, the chicken is done when the breast temperature is 165 degrees, and the thigh temperature is 180 degrees
- check the meat temperature every 15 minutes so it doesn't overcook
