Mustard Chicken with Greens
8 oz skinless, boneless chicken breast, halved
1/4 c whole grain mustard, with no starches (check label)
1 bunch greens, washed and dried
Sea salt and black pepper
Directions
- coat the chicken in the mustard and let marinate one hour in the refrigerator
- preheat broiler
- remove chicken from the dish and place in a broiler pan
- cook for six minutes on each side, until cooked through
- steam the greens until soft
- divide evenly between two plates and top each serving with chicken
- season to taste with salt and pepper
