Mustard Chicken with Greens


8 oz skinless, boneless chicken breast, halved

1/4 c whole grain mustard, with no starches (check label)

1 bunch greens, washed and dried

Sea salt and black pepper


Directions


  1. coat the chicken in the mustard and let marinate one hour in the refrigerator
  2. preheat broiler
  3. remove chicken from the dish and place in a broiler pan
  4. cook for six minutes on each side, until cooked through
  5. steam the greens until soft
  6. divide evenly between two plates and top each serving with chicken
  7. season to taste with salt and pepper
