Parmesan Oven Roasted Chicken Breast
4 8 oz skinless boneless chicken breasts
3/4 c light mayonnaise
1/3 c finely shredded parmesan
1/4 c fresh lemon juice
1 T Dijon mustard
2 t honey (or maple syrup) (can replace with maple stevia drops)
1 t Italian seasoning
1 T avocado oil (or evo)
Sea salt and black pepper to taste
Directions
- season the chicken breast with a good pinch of salt and pepper and place in a Ziplock bag
- in a small jug, whisk together all ingredients except the oil
- pour 1/2 of the mixture over the chicken and stir through the bag, reserve the other 1/2 of mixture to use as a dip (do not let it touch the raw chicken)
- marinate chicken for 30 minutes on the counter
- meanwhile, preheat the oven to 375 degrees and lightly grease an oven-safe dish with the oil (you can also use parchment paper)
- transfer the marinated chicken to the oven-safe dish and back for 35-45 minutes, or until the internal temperature reads 165 degrees
- slice and serve with remaining sauce
