Parmesan Oven Roasted Chicken Breast


4 8 oz skinless boneless chicken breasts

3/4 c light mayonnaise

1/3 c finely shredded parmesan

1/4 c fresh lemon juice

1 T Dijon mustard

2 t honey (or maple syrup) (can replace with maple stevia drops)

1 t Italian seasoning

1 T avocado oil (or evo)

Sea salt and black pepper to taste


Directions


  1. season the chicken breast with a good pinch of salt and pepper and place in a Ziplock bag
  2. in a small jug, whisk together all ingredients except the oil
  3. pour 1/2 of the mixture over the chicken and stir through the bag, reserve the other 1/2 of mixture to use as a dip (do not let it touch the raw chicken)
  4. marinate chicken for 30 minutes on the counter
  5. meanwhile, preheat the oven to 375 degrees and lightly grease an oven-safe dish with the oil (you can also use parchment paper)
  6. transfer the marinated chicken to the oven-safe dish and back for 35-45 minutes, or until the internal temperature reads 165 degrees
  7. slice and serve with remaining sauce
