Swiss Chard Chicken


8 oz skinless, boneless chicken breast, halved

1/4 t sea salt

1/4 t black pepper

1 garlic clove, minced

1 apple, peeled, cored and pureed

3 Swiss chard, chopped


Directions


  1. sprinkle chicken with salt and pepper and place in a hot skillet
  2. cook five to six minutes on each side or until well browned
  3. remove to plate and keep warm
  4. add next three ingredients to pan and bring to a boil
  5. reduce heat and simmer, stirring often, for three minutes
  6. return chicken and juices to the pan
  7. cook, stirring occasionally until sauce thickens and the chicken is cooked through, about three minutes more
  8. add the chard to the pan and toss until wilted, about one minute
  9. season to taste with salt and pepper
