Swiss Chard Chicken
8 oz skinless, boneless chicken breast, halved
1/4 t sea salt
1/4 t black pepper
1 garlic clove, minced
1 apple, peeled, cored and pureed
3 Swiss chard, chopped
Directions
- sprinkle chicken with salt and pepper and place in a hot skillet
- cook five to six minutes on each side or until well browned
- remove to plate and keep warm
- add next three ingredients to pan and bring to a boil
- reduce heat and simmer, stirring often, for three minutes
- return chicken and juices to the pan
- cook, stirring occasionally until sauce thickens and the chicken is cooked through, about three minutes more
- add the chard to the pan and toss until wilted, about one minute
- season to taste with salt and pepper
