Adobo Beef


1/4 c fresh squeezed lemon juice

2 t black pepper

2 t dried oregano

2 t ground cumin

6 garlic cloves, crushed

8 oz beef tenderloin

2 T fresh cilantro, coarsely chopped

2 T green onion, finely chopped


Directions


  1. combine first five ingredients in a large baking dish
  2. place tenderloin in dish, turning to coat
  3. cover and marinate in refrigerator for one hour, turning beef occasionally
  4. place on grill and cook for 15 minutes, turning once, or until cooked to desired doneness
  5. cut into slices and sprinkle with cilantro and green onions


Serve with grilled vegetables of your choice
