Adobo Beef
1/4 c fresh squeezed lemon juice
2 t black pepper
2 t dried oregano
2 t ground cumin
6 garlic cloves, crushed
8 oz beef tenderloin
2 T fresh cilantro, coarsely chopped
2 T green onion, finely chopped
Directions
- combine first five ingredients in a large baking dish
- place tenderloin in dish, turning to coat
- cover and marinate in refrigerator for one hour, turning beef occasionally
- place on grill and cook for 15 minutes, turning once, or until cooked to desired doneness
- cut into slices and sprinkle with cilantro and green onions
Serve with grilled vegetables of your choice
