Stuffed Tomatoes
4 oz lean ground beef or turkey
2 medium sized tomatoes
1 melba toast, crumbled
1 T minced onion
1 clove garlic, diced
1/8 t garlic powder
1/8 t onion powder
1/8 t oregano
1/8 t basil
Salt and pepper to taste
Directions
- hollow out the tomatoes and set pulp side up
- sprinkle with salt and turn upside down and remove excess water
- combine meat, onion, garlic, garlic powder, oregano, basil and brown the meat
- while the meat browns, puree the tomato pulp in a food processor or blender with some salt and pepper
- once the meat is cooked add the pulp and mix well
- fill hollowed tomatoes with the meat mixture and top with the melba toast crumbs
- bake at 350 degrees for 20 minutes
