Stuffed Tomatoes


4 oz lean ground beef or turkey

2 medium sized tomatoes

1 melba toast, crumbled

1 T minced onion

1 clove garlic, diced

1/8 t garlic powder

1/8 t onion powder

1/8 t oregano

1/8 t basil

Salt and pepper to taste


Directions


  1. hollow out the tomatoes and set pulp side up
  2. sprinkle with salt and turn upside down and remove excess water
  3. combine meat, onion, garlic, garlic powder, oregano, basil and brown the meat
  4. while the meat browns, puree the tomato pulp in a food processor or blender with some salt and pepper
  5. once the meat is cooked add the pulp and mix well
  6. fill hollowed tomatoes with the meat mixture and top with the melba toast crumbs
  7. bake at 350 degrees for 20 minutes
