Roasted Tenderloin


8 oz tenderloin

1 1/2 t chili powder

1 t cumin

1/2 t sea salt

1/2 t dried oregano

1/2 t black pepper

1/4 t garlic powder

1/4 t celery seeds

1 T fresh squeezed lemon juice


Directions


  1. mix a dry spice in a small bowl
  2. place the tenderloin in a dish and drizzle with the lemon juice
  3. rub spice mixture over the tenderloin
  4. cover and refrigerate one hour
  5. preheat oven to 350 degrees
  6. let the beef stand at room temperature for 15 minutes
  7. place in a non-stick roasting pan
  8. bake for 30-40 minutes or until it reaches desired doneness
  9. remove from oven and let stand 20 minutes before slicing
