Roasted Tenderloin
8 oz tenderloin
1 1/2 t chili powder
1 t cumin
1/2 t sea salt
1/2 t dried oregano
1/2 t black pepper
1/4 t garlic powder
1/4 t celery seeds
1 T fresh squeezed lemon juice
Directions
- mix a dry spice in a small bowl
- place the tenderloin in a dish and drizzle with the lemon juice
- rub spice mixture over the tenderloin
- cover and refrigerate one hour
- preheat oven to 350 degrees
- let the beef stand at room temperature for 15 minutes
- place in a non-stick roasting pan
- bake for 30-40 minutes or until it reaches desired doneness
- remove from oven and let stand 20 minutes before slicing
