Mediterranean Meatballs


8 oz lean ground beef or extra lean ground turkey

1 t dried nutmeg

1 t dried sage

16 oz bag of spinach, wilted and chopped

14 oz can tomato juice

4 cloves garlic, minced

2 bags protein pretzels, crushed


Directions


  1. in a large bowl, combine meat, garlic, onion, protein pretzels, nutmeg, sage, spinach, salt, and pepper
  2. mix well
  3. form 2 T size meatballs
  4. place meatballs tightly next to each other in a small baking dish
  5. pour tomato sauce over the meatballs and season once more with salt and pepper
  6. in 400-degree preheated oven, bake for 30 minutes, until cooked through
