Mediterranean Meatballs
8 oz lean ground beef or extra lean ground turkey
1 t dried nutmeg
1 t dried sage
16 oz bag of spinach, wilted and chopped
14 oz can tomato juice
4 cloves garlic, minced
2 bags protein pretzels, crushed
Directions
- in a large bowl, combine meat, garlic, onion, protein pretzels, nutmeg, sage, spinach, salt, and pepper
- mix well
- form 2 T size meatballs
- place meatballs tightly next to each other in a small baking dish
- pour tomato sauce over the meatballs and season once more with salt and pepper
- in 400-degree preheated oven, bake for 30 minutes, until cooked through
