Roasted Smashed Radishes
1bag (8 oz) Red Radishes
Sea Salt
Black Pepper
Fresh Herbs (Thyme, Rosemary, ...)
1/2 c fresh grated Parmesan Cheese
Directions
- rinse the radishes and slice length wise (keep size consistent for baking)
- preheat oven to 425 and roast radishes for 20-25 minutes on baking sheet
- remove from oven, drizzle with olive oil, season with salt and pepper, and fresh herbs (if desired), and parmesan cheese
- return to oven for 10-15 minutes, cheese should melt and edges of radishes should be lightly browned
- if you desire more browning, place in broiler for a minute or so, be aware that this will brown quickly
