Roasted Smashed Radishes

1bag (8 oz) Red Radishes

Sea Salt

Black Pepper

Fresh Herbs (Thyme, Rosemary, ...)

1/2 c fresh grated Parmesan Cheese

Directions

  1. rinse the radishes and slice length wise (keep size consistent for baking)
  2. preheat oven to 425 and roast radishes for 20-25 minutes on baking sheet
  3. remove from oven, drizzle with olive oil, season with salt and pepper, and fresh herbs (if desired), and parmesan cheese
  4. return to oven for 10-15 minutes, cheese should melt and edges of radishes should be lightly browned
  5. if you desire more browning, place in broiler for a minute or so, be aware that this will brown quickly
