Spicy Roasted Squash with Feta and Herbs
1 large acorn squash, seeded and cut into slices
3 T coconut oil, melted
3/8 t liquid stevia
1 t chili garlic paste
1/4 t sea salt
1/4 t black pepper
4 oz feta cheese, crumbled
1 T Fresh cilantro, chopped
1 T Fresh basil, chopped
1 T Fresh oregano, chopped
Directions
- preheat oven to 375 degrees
- in a small bowl, whisk together the coconut oil, stevia, and chili garlic paste
- place sliced squash in a baking dish and pour the mixture over the top, season with salt and pepper then toss well to coat
- roast for 20 minutes, then toss a bit to coat, roast for another 20 minutes
- remove squash from the oven and immediately cover with crumbled feta and herbs
- scoop out any extra sauce from the baking dish and place it on top then serve and enjoy
