Spicy Roasted Squash with Feta and Herbs

1 large acorn squash, seeded and cut into slices

3 T coconut oil, melted

3/8 t liquid stevia

1 t chili garlic paste

1/4 t sea salt

1/4 t black pepper

4 oz feta cheese, crumbled

1 T Fresh cilantro, chopped

1 T Fresh basil, chopped

1 T Fresh oregano, chopped

Directions

  1. preheat oven to 375 degrees
  2. in a small bowl, whisk together the coconut oil, stevia, and chili garlic paste
  3. place sliced squash in a baking dish and pour the mixture over the top, season with salt and pepper then toss well to coat
  4. roast for 20 minutes, then toss a bit to coat, roast for another 20 minutes
  5. remove squash from the oven and immediately cover with crumbled feta and herbs
  6. scoop out any extra sauce from the baking dish and place it on top then serve and enjoy
